The traditional vinegar from Modena is one of the most appreciated Italian products in the world. The production process of balsamic vinegar is to harvest the grapes, usually Trebbiano and Lambrusco, in the crushing and cooking of the must and aging. The baking, for the purposes of the success of the operation, must be immediately after the crushing. The must is cooked until it reaches a concentration of about 50%. It is then conveyed in barrels batteries of different woods and measures which will ferment and acetificarsi with a minimum 12 years aging. It will then slowly picked up with a special transfer technique. The production of traditional balsamic vinegar is very different from the non-traditional course that has an entirely different flavor.

 

 

The traditional vinegar of Modena has a very dark color and a thick aspect, dense. The taste is a perfect balance of sour and sweetish notes that make it unmistakable flavor.
